Ingredients

  • 250g cups butter
  • 1 1/2 cups raw caster sugar
  • 2 egg
  • 1 tsp vanilla extract
  • 1/2 cups milk
  • 2 1/2 cups plain gluten free flour
  • 6 tbs cocoa powder
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 zucchini shredded

Method

  1. Preheat oven to 160C
  2. Grease 23 cm x 30 cm pan
  3. Cream butter and sugar.
  4. Beat in the eggs.
  5. Add milk and vanilla and sifted dry ingredients.Stir
  6. Stir in zucchini.
  7. Bake at 160C for 40-45 minutes.
  8. Remove from oven and allow to cool for 5 minutes
  9. Turn out onto rack and allow to cool completely
